Retort Technology is an advanced method of food preservation that involves the use of high-temperature and high-pressure processing to sterilize food products packaged in flexible pouches, trays, or cans. How retort technology works

1.Packaging

Food is prepared and sealed in heat-resistant packaging, such as retort pouches (laminated, flexible pouches), trays, or cans. These packages are designed to withstand high temperatures and pressures..

4.Cooling

After the sterilization process, the packages are rapidly cooled using water or air to stop the cooking process and prevent the overcooking of food. The cooling phase also ensures the integrity of the packaging and maintains the vacuum seal.

2.Loading

The sealed packages are placed into a retort machine, which is essentially a large pressure cooker or autoclave.

3.Sterilization

The retort machine is then sealed, and the temperature is raised (typically between 240°F to 275°F or 116°C to 135°C) under high pressure. This heat treatment, often involving steam, hot water, or a combination of both, is maintained for a specific time depending on the type of food and its packaging.

6.Opening and serving

The food remains, as fresh as, when it was packaged, for over two years.

The consumer can heat the product, if required, or consume as it is. But once opened, if not consumed completely, the product needs to refridgerated.

5.Quality Check:

Once cooled, the packages are inspected for any signs of leakage or damage and then labeled and packed for distribution.
